Bring 1 cup of @water{1%cup}, @veggie stock concentrate{2%unit}, and a pinch of @salt{} to a boil in a #small pot{}. Once boiling, add @couscous{1%cup}. Remove from heat, cover, and let stand until the rest of the meal is ready.

Heat a drizzle of @vegetable oil{4%teaspoon} in a #large pan{} over medium-high heat (use a nonstick pan if you have it). Pat @skin-on salmon{20%ounce} dry with a #paper towel{}. Season all over with salt, @pepper{}, and @Turkish spice blend{2%tablespoon}. Add to the pan skin-side down. Cook to your desired doneness, 3-6 minutes per side.

Wash and dry all produce. Halve @lemon{2%units}. Halve and core @apple{2%units}, then thinly slice.

Place @brown sugar{2%tablespoon} in a #medium bowl{}. Squeeze in juice from one lemon half and stir to dissolve the sugar. Add @Dijon mustard{4%teaspoon} and @sour cream{8%tablespoon} and stir to combine. Season with @salt and pepper.

Place @arugula{4%ounce}, apple slices, and @pecans{2%ounce} in a #large bowl{}. Add a big squeeze of lemon and a drizzle of vegetable oil and toss to combine. Season with salt and pepper.

Fluff the couscous with a fork and season with salt and pepper. Divide the couscous between plates, then top with the salmon. Drizzle with the sauce. Serve with salad on the side.
